Bison Brisket

Not so great!

Flavor was good, just dry and dense meat I feel due to being the flat portion of the brisket. Would not order again. I would like to try smoking a point and seeing how that work out.

Superbowl Bison Brisket

First time making a smoked bison brisket and it came out perfectly for a Superbowl party. Ordered the brisket the weekend prior. Meat arrived in a few days. Meat was packaged perfectly in a cardboard box that contained a Styrofoam cooler with ice packs and dry ice. Meat was still frozen. The box the brisket came in was labeled as 5 lbs. Thawed the meat in the refrigerator for a couple of days. Prepped the meat with salt and pepper the night before. Smoked the brisket, wrapped it once it got to temperature, and then let the brisket properly rest. Everyone at the Superbowl party loved the meat and said it tasted better than traditional beef brisket. The bison brisket was tender and moist. Great flavor. Would highly recommend.

The brisket turned out very good and was enjoyed by at the dinner. As well as the hamburger patties. Will be buying more.
