Toma & Porketta
All your cheeses are very special! I prepared a Kurobata Berkshire ham and a beautiful porketta roast for our family Easter dinner. As an appetizer I used your recipe for puff pastry Brie with bacon and leeks. Awesome! However, the leftover porketta presented the opportunity to use your Toma as the cheese in warmed sandwiches yesterday. The condiment to marry the porketta and Toma was Truffle mayonnaise. The Toma was the perfect melting cheese for the sandwiches!
The TomaRashi would have worked well, too. But, the spices in the porketta were sufficient, so I opted for the Toma!

Balsamic Onion, Fig and Original Blue Pizza
OMG, if you haven’t had this pizza your life is a void!
I gave my wife a wheel of blue for her birthday. Saw the recipe and pulled out our figs from the freezer and made the recipe with mozzarella. Very good.
Ordered Toma and made it again! Words can’t begin to describe how delicious this pizza is!
