I never heard of nor ever had a halibut cheek until my friend Karen told me about her Grandfather. He was a halibut fisherman in Alaska. She said that many halibut cheeks never made it to market because the fishermen kept them for THEMSELVES….it was a prize for the fishermen.. Why else are they so often out of stock? Get them while you can and you will not be disappointed. To me, it is the tastiest morsel the sea has to offer.
