This is what soy sauce should taste like. One would be wise to never buy it at the market again. You’ll see what I mean when you taste this soy sauce.

Great umami!
This is a very different taste. It is milder and adds a lot of umami to the vegetable stir-fry. The flavor is very complementary in the noodle dishes. What a pleasant discovery!
