Pho yeah!
dinner is usually my big meal for the day, so I was a little skeptical at how filling this would be after a solid day of hiking (and snacking). my skepticism was soon met with a great melange of flavors, and a surprising amount of noodles. I did add unsalted pumpkin seeds, because why not? sometimes, when I'm feeling lazy, I make one of these for dinner at home, and always feel good about my decision.

We don't bother waiting for a hike to eat this one. We just eat it at home.
It's absolutely the best shelf-stable Pho on the market. We will cheerfully dump some hot water in from the kettle and have pho for lunch at home.
If I did a LOT of yard work or hiking and want extra protein on top of their generous portions of chicken, I will crack a couple eggs in and microwave it a bit more.
