Worth the extra $$
I have an IR thermometer gun. Metals like stainless throw it off due to mirror like reflectivity. This works on contact every time on every material. It works fast & has Thermoworks famous accuracy. My only complaint is my kitchen's lighting makes it hard to read without a 🔦.

Expensively dim
I purchased the Pro-Surface Thermapen for a stainless steel griddle. While I don't have a means of verifying that temps are accurate, it seems to work for my needs. However, this is an overpriced temp gauge with a very dim LCD screen. For the price, the screen should be lit. Unfortunately, there is no competition for this device yet -- which may explain the price.

Direct measurement of the pan surface is key
No translation or adjustment needed due to the type of pan, shiny or dull, etc. This offers direct contact with the metal surface to give a straight-up temperature reading. As easy as reading an outdoor thermometer.
