Loving the depth of flavor to the Columbian! My family are particularly fans of the chocolate and rich earth roasted notes, the fruitiness here is noticeable, but light enough that it is pleasant.
Using the Samdasoo Jeju Island water, it was soft enough to over-emphasize the bright notes. Tamed this by going to higher mineral water to reinforce the notes we appreciate more.

Medium grind, Aeropress using inverted steep method, about 30g coffee (I like my coffee very strong).
Water is adjusted by bringing to the boil, right away pouring out 60ml, cooling down to around 95 degrees.
Once I pour water in, I stir around the bottom and sides of Aeropress, long strokes making sure to move the bottom around, 30 seconds.
Cap, plunge with steady pressure until first bout of hissing stops or lessens a lot.
About 70ml oat milk (Oatside Barista) heated until just starting to steam but well before any boiling to keep it flat with no hints of foam.
Combine and enjoy.
