The shell steak is one of the two muscles that form the Porterhouse/T-bone. Also know as a Bone-In Strip Steak, it is the longer muscle on the Porterhouse and the filet is the shorter/rounder muscle on the other side of the bone. Running from the end of the rib to the beginning of the hip, it makes for a leaner cut than the rib steak but

Disappointing
First, I've been a longtime (20+ years) regular at Wolfgang's in NYC- MP is a supplier so I was super excited to order to my beach home out east. In 2020, during the pandemic, the steaks were beyond awesome- raving ever since. Well, fast forward, placed our first order for 2022. Steaks arrived, as promised, on time and in great condition. Now, the bad part - the product. Maybe I'm a bit spoiled and my expectations are super high, I'll grant you that. But then again (this is crazy, I know), when you order a premium product, you expect to receive what you paid for - a premium product (i.e. something you can't get in a supermarket). The steaks, while delicious, were just not up to what I've been used to receiving. The aging was nowhere near 28 days (you can tell by smell, color, marbling) and they just didn't have the taste and texture of previous orders. I'm pretty good at grilling these -- precisely on a timer over a grill, I cook them to rare-plus (just short of medium-rare). My good friend is also a customer and he brought over a couple of steaks one night, we grilled them, and pretty much the same experience. I will tell you that I just had steaks from Costco that were superior in every aspect to what I received from Master Purveyors. Another item of note - customer service. I sent in a a note to customer service via the link on the website (email **and** contact form) substantially speaking to my comments above and have received no response. Again- I know that customer service nowadays at most places consists of giving you the bird (on a good day), but very surprised at the lack of response and attention here. Just saying. Maybe MP has gotten too popular, maybe skimping on QA, maybe not enough people. Unsure. But I'm passing for now given the experience and lack of response. Ciao.
