Good knives… not for the professional
These knives are good. They cut. They serve their purpose. Do not expect top Japanese quality with these knives. I use the deba more than the Yangi mainly because the yangi is insanely soft. It will be dull before the day is done with a fresh hone on a 3000/8000 whetstone. The deba holds its edge a bit longer. My only downside of the deba is it is a bit thin. I sometimes second guess cuts with this knife because I’m not sure if it will survive. These are good knives for somebody who doesn’t work with fish very often but for somebody like me who works with and cuts fish all day long they can’t keep up
