What a great brew! The only thing I put in a 12-oz cup of it is exactly one tablespoon of pasturized honey to draw out the deep flavor and round out the texture. And I prefer to shop local, so that's why I keep it right here in the Midwest with Eli and Jen! ITM! Also: I love having a five-pound bag laying around so I don't feel tempted to conserve my supply. And just one more thing (in the blessed memory of Peter Falk): if some of the coffee ends up sitting in the cup till later... it still tastes GREAT at room temperature! It is the only coffee I can say that about. Thanks Eli! And Jen!

Possibly the best beans for drip or pourover but a little too dark for espresso I think. Needs to be brewed around 194-195F and have a relatively fast shot around 15-20 seconds for optimal flavor. I will likely try the medium or medium light roasts next time.

I think having a clean coffee pot is important to great tasting coffee. It is, however hard to keep track of when to clean the coffee maker. I use the coffee filters as my reminder to clean, when I’m out of filters that means I’ve made 100 pots of coffee and it’s time to clean. Coffee always tastes great! Jen and Eli’s coffee never misses, predictably excellent, no bitter after taste, no acid “kickback,” only great flavor sure to be enjoyable around the 3:00 hour! Did you guys get my request to add a bag to my next delivery and then return my order of 2 bags after that. Thanks Jeffry
