I love this flavor and I love these muffins!

I have to make them as mini muffins so that I can eat two at a time - I add a few mini chocolate chips to the top and always bake in a silicon pan. This flavor (mint chocolate) is one of my favs. It doesn't have a strange aftertaste but is like getting to have a chocolate treat mid-day that holds me over till the next meal!
