This buckwheat flour is used in a 100 year old recipe for buckwheat pancakes, utilizing yeast (let rise overnight), buttermilk and regular flour.
Hard to find the correct buckwheat flour, however this product is perfect for this recipe.
1 cup buckwheat flour
1 cup unbleached flour
1 packet yeast, mixed into a cup of warm water
Room temperature buttermilk
1/2 cup brown sugar or molasses
Mix together, let sit overnight on counter or stovetop, covered with a towel.
In the morning, will have risen slightly, enjoy off the griddle with Vermont maple syrup!
