The Biryani recipe provided is slightly more complex than the other curries in that there are more steps. But, the patience required is well worth it. I've made two chicken biryanis so far and they've been superb. Top tips: 1) the saffron is a key ingredient, don't be too skimpy; 2) Use stock instead of water for extra flavour.
