Not what I hoped for

Just got my order about 4 days ago. Looking to replace Starbucks Pike Place. Thought this blend would do it. Nope. I like a medium coffee with just a hint of chocolate. This blend is not as smooth, and has a tangy after taste. I grind and use a french press. Same ratio as other brands. As a retired Navy Submarine CPO, coffee is my life blood. Any suggestions?
