Firstly the meat quality and taste was good but the when the meat arrived, for me it wasn’t butchered correctly. The point was cut into deeply essential meaning the brisket had a flap. Didn’t complain at the time but was sent the review email so decided respond.

Excellent quality slab of meat. Thought it would came with a bit more of a fat cap but researched it and found that it doesn't really make a difference. This joint was dry rubbed. Cooked low and slow and smoked with hickory for 5 hours and wrapped then continued cooking for a further 6 hours until 205°F internal temp. Super tasty and moist brisket. Will definitely purchase again.
