Good in whole wheat bread
It's a wonderful addition to whole wheat bread. I add up to a third Kernza flour for a richer taste and lighter texture.

Kernza Belgian Waffles
Finally got to make batter according to Kaplan recipe. Really impressed by the taste, lightness, WW - brown cross-section, cooked 3 minutes in Belgian waffle iron. Definitely different, lighter, more flavorful than the Kodiak mix I use. (But Kodiak is the best flapjack/waffle mix I have found on the shelf. May add some Kernza to Kodiak next time.)
Now wait: Found the batter too thin per Kaplan, had to add more Kernza flower. For me, should be 2 cups+, at least. Make it thicker !!
A great experience and a surprise for me, as I am skeptical by nature. My 85lb choc Lab also liked it!
