Espresso brewing: Got great results pulling this according to the suggested method of 1:2.75 ratio at 93C in 28-32s. You need a bigger ratio or else this will be too acidic.
Also makes an awesome pour-over (V60) using a 1:16 ratio and water at 93C.
Flavour profile is all sweet yellow fruits: caramelized pineapple and peaches. This was my first “modern” style espresso and it was mind-blowing! Absolutely no astringency when brewed with a V60…crazy!
