A nice piece of lower brisket 3.2 kgs
It looked nice once out of the vacuumed pack , dried it all round and made up my own rub . Advice from chefs were around the 1.15 to 2 hrs a pound . I covered all surfaces with rub at 9-00pm overnight till 5-00am in the morning . Expected it would take 7 hrs minimum at 1.15 hrs per pound at 135 C on gas mark 2 . Took it out to check after 5 hours and popped my temp gage into the thick end which showed 93 C so took it out to rest . My 6 guests said it was beautiful and was very tender and moist . So in my gas oven around 45 minutes per pound at 135 c gas mark 2 was correct .Very pleased with flavour and how it cooked.
