Settings don't stay!

The printer seems to be doing okay, so far. Creality really pushes the "cleaner build" for their 3D prints, but this still shows lines all over the place from the individual layers of filament. And I have mine going in "silent mode" which is the slowest print possible. Generally those prints are higher quality since they are slow. But it still LOOKS like a 3D print with all of the lines in it. I want something cleaner, so I guess Ender won't be used for anything that needs to be clean. I needed the bigger area though because I'm making things that are about 15 inches long. I wanted a total of 18.75 inches of work space but nothing covers that size, so this was the next-best thing to cover the size I needed. Meanwhile, the settings do not want to stay! I turn the fan on 50% and it takes a couple of seconds and turns it right back to 100%. I paused printing for about 15 minutes and when I restarted it, the printing speed changed to 125% (which you can see the deep lines in the photo where the speed changed on it's own twice - once when paused, and again about an hour later). And even though I set printing speed in the app AND on the device before I even began printing at all, when I started new project it went to 100% anyway - not the Silent mode. And it kept changing the bed temperature too. I set it to 60 degrees, but it kept putting it back at 45. The filament I'm using suggests 50-60 degrees. So 45 is technically too low, but it does not STAY THERE no matter what I do! So the settings really mean nothing. Set it to whatever you want, it'll change it to something else anyway. It will do what it WANTS to do, not what you tell it. There's also NO documentation to explain certain settings. Like the "Silent mode" does not mention the speed of the print. But after looking it up online GOOGLE told me it was the slowest print speed. I'm assuming it pulled it from Reddit somewhere, but it's not on the Creality site at all. And last but not least, be ready to search for tiny things when putting it together. It will say "Now connect X to Y and tuck into the profile" but doesn't tell you WHICH profile (support leg) it will be at. Or it may say "connect X to Y" and it's regarding small connections on the base. It's horrible about saying WHERE these connections are. So once you figure it all out, and forget trying to change the settings AT ALL, you might get what you want out of it.
